If you caught my first post on why I’m doing the keto diet, you know how excited I am to be going on this journey. Going keto has been a long time coming for me and never have I felt it was a better time to do it than now.


I’ve always had a passion for health and wellness. From a really young age I was putting together research report for my family on everything from the benefits of farming to the dangers of smoking. Today, you can find me researching much more advanced topics like chronic digestive disease treatments, using food as medicine, metabolic typing, and more.


In my first post on why I’m doing the keto diet, I explain that it was while I was studying metabolic typing that I developed a strong interest in the power of the keto diet. A week into the diet already, I’ve already felt a lot of goodness set in and my body is craving and loving all of the good fats!


For those of you considering doing the keto diet yourself, or simply curious how a digestive health coach approaches implementing a brand new health regime, I’m going to be documenting week-by-week my experience – everything from how I’m feeling physically, to my mindset, and some example of what I ate that day.


Day  1

I am so excited that today is the day! I literally have been craving healthy fats — avocado, coconut oil, bacon — bring it on! Out of sheer excitement, I didn’t crave carbs or sugar at all today, which is huge for me. I’m also interested to see how this fat-fueled diet will help with my hormone health, as that’s something I’ve been working on for several years now, too. Interestingly  enough, I had a really strange period over the holidays (aka it lasted only 3 short days) and today, it came back as its normal self. Fats are incredibly supportive for hormone health as they’re the precursor for many of our hormones, so could this already be a sign that more fat was what my body needed all along? Color me intrigued…


This morning, I went out shopping for all the ingredients on my shopping list for this week’s meals. I’m treating today as an “easing in” day as I adjust to the details of the diet. I had a normal smoothie this morning before heading off to the grocery store and once I got home, I began meal prepping for the week so it would be easy to dive right in.


Day  2

Today was the first full day of keto and I woke up feeling excited again. If you ever read about the keto diet, you’ll probably hear about the “Bulletproof” or “Fat Fueled” coffee. Yep, it’s a real thing. The diet plan I’m following advocates for adding MCT oil into your coffee every morning as your breakfast. I’m not a coffee drinker, both for digestive health and adrenal health reasons, but since I haven’t had it in a really long time, I decided to opt for organic decaf coffee and give this thing a shot. Interestingly enough, my stomach was actually fine with it (maybe it was because there was no caffeine) and I did feel full with the added fat in it.


I didn’t experience any cravings today and definitely felt full longer from my meals. Everything I’ve been cooking so far, whether it’s beef, salmon, or chicken, is cooked in fat (tallow, duck fat, coconut oil, etc.) and I’m really not minding ALL of the fat I’m now eating. At times it seems like it would be a bit nauseating, but I like it. My husband is doing this diet with me (have I mentioned yet how amazing and supportive he is?!) and I think at times the amount of fat in these recipes makes him a bit grossed out, but he’s pushing through and feeling pretty good  as well.


Day 3

Today, I woke up feeling hungry. Perhaps it was because I didn’t have the recommended after-dinner snack the meal plan I’m following recommends or my body is just adjusting. Feelings of hunger are a side effect of this diet, despite how much fat we’re eating, because our body is switching fuel sources and there can be a period of confusion as our bodies adapt.


I tried the decaf Bulletproof  coffee again this morning with no stomach pains, hooray! I felt satiated from that and from lunch (a fat-soaked salad!) but my husband and I both felt hungry after our dinner, which was an egg, bacon, and avocado fries dish. I’ve been drinking lots of mineral-infused water this week so I had some of that and it seemed to help replenish me.


I’m not sure if this was related to the diet or because this is the week after the holidays, but I felt very tired and out of it this afternoon. Interestingly enough, that tiredness quickly turned into a deep sense of relaxation. I’ll see if this trend continues…


Day 4

I woke up feeling hungry again today but didn’t have time to make a formal breakfast so I did the decaf Bulletproof coffee again and snacked on a bit of leftovers from last night. I noticed my stomach hurt a bit today, but I’m also still having my period (sorry for the TMI, guys!) and am having some cramps so it can be hard to distinguish between stomach pain and cramps. So I can’t say for sure what’s going on there, but otherwise I feel good.


Another strange thing that occurred is I had ringing in my ears today. I haven’t looked into what that could mean  yet, but it was odd and did go away.


Day 5

Woo, I have incredible energy this morning! I added full fat coconut milk to my decaf Bulletproof coffee blend this morning and woah did I feel good from that! I followed that by a cup of homemade bone broth (made in my  shiny new Instapot!) and wasn’t hungry for lunch until about 1pm. I started to feel a bit tired around 2pm so I made a tea with coconut milk and felt fine after that.


Day 6

Today was the first day I worked out since starting this diet (well, I did on Day 1 but I wasn’t fully ramped up on it yet). In what I’ve read about keto, sometimes you don’t have much energy for exercise as your body works to switch fuel sources, so I took my time at the gym with caution. Surprisingly,  I had a great amount of energy. Another great thing that happened today is I had zero caffeine (I actually only  had it one time yesterday all week which is a huge breakthrough for me!) and today was the first day I didn’t feel an energy slump around 2pm since being on this diet.


I also realized that all this week, I haven’t had much of any digestive upset — in fact, it’s the least amount I’ve had in a long time! This is HUGE!


Day 7

Another high-energy day today and even better, I felt zero cravings and less hunger. I think ketosis is beginning to set in! My husband was feeling a bit cranky and hungry today but so far I’m doing pretty darn good. What’s best of all for me is I’ve had zero digestive issues throughout this whole week. Drastically reducing carbs and completely cutting out sugar had a lot to do with that, and I’m so glad that it’s truly working and enabling my body to continue healing

I can’t wait to see what Week 2 brings! We’ll be getting into the thick of the diet and reducing calories a bit more this week as we push our bodies fully into ketosis so stay tuned next week for how I did through this next phase…
