I used to crave sweets — a lot. But ever since I transitioned my diet to a no-processed, low-sugar, grain-free way of eating, my sweet cravings naturally decreased. But every now and then, I do want a little something sweet, so I ensure it’s grain-free and using only the highest quality and unprocessed ingredients.

Ingredients
  1. 1 1/4 cups almond meal (or flour, there isn't much difference for the purposes of this recipe)
  2. 3/4 tsp baking soda
  3. 1/2 tsp salt
  4. 1/2 cup almond butter
  5. 3/4 cup coconut palm sugar
  6. 1/3 cup honey
  7. 3 tbsp coconut oil, melted
  8. 2 large farm fresh eggs
  9. 1 tsp vanilla extract
  10. 3 tbsp slivered almonds
Instructions
  1. Pre-heat oven to 350 degrees F
  2. Spray a cake pan with coconut oil spray (again, Trader Joes has a good one)
  3. Whisk together flour, baking soda and salt in a smaller bowl
  4. In a larger bowl, mix with a hand-held electric mixer the almond butter, honey, palm sugar, melted coconut oil, egg and vanilla until smooth
  5. Gently stir in flour mixture with mixer until fully combined
  6. Cover the bowl with plastic wrap and refrigerate for 1 hour to thicken
  7. After 1 hour, pour batter (it will now be firmer) into oiled pan and sprinkle evenly with slivered almonds
  8. Bake in oven for 17-20 minutes or until it passes the toothpick test
  9. Cool on a wire rack for 1 hour
  10. Enjoy!
