Not only do I add them to many of my smoothies, but I use them to create an overnight pudding, too. I’ve tried making several variations of this recipe and finally found one that hits the mark. I couldn’t believe how easy and simple it was to make. See below and enjoy! 

Blueberry Chia Pudding

An easy overnight breakfast or snack pudding

Ingredients
  1. 3 tablespoons chia seeds
  2. 1 cup dairy free milk
  3. 1/2 cup blueberries (frozen or fresh both work)
  4. Dash cinnamon
  5. 1 teaspoon raw, local honey
  6. 1 tablespoon shredded coconut (optional)
  7. 1 tablespoon protein powder (optional)
Instructions
  1. (Make this the night before): Mix all ingredients in a container with a lid, shake well and let it sit overnight in the refrigerator.
  2. The next morning, either eat the pudding cold or transfer it from the container to a pot on the stove
  3. Warm it for 2 to 3 minutes and serve in a bowl
