grain free pizza

Cheese and bread, oh how I miss you! Sometimes not being able to have foods you once loved can be a tough realization, which is why every week I find a new way to work an old recipe into a grain and dairy free variation.

This recipe replaces a traditional crust with meat and you can add whatever toppings you like. As a matter of fact, I might even enjoy this variation more than I ever did regular pizza. (My fiance won’t admit it but he’s pretty smitten for it too!).

Below is the recipe I’ve fallen in love with:

  1. Crust
  2. 1 lb lean ground beef
  3. 1 lb lean ground pork
  4. 1/2 cup yellow onion, diced
  5. 1 clove garlic, minced
  6. 1 egg
  7. Salt and freshly ground pepper to taste
  8. Topping
  9. 1 cup pepperoni, bacon, sausage (whichever, or a combination, you choose, so long as it's Paleo-compliant!)
  10. 1/2 cup tomato, diced
  11. 1/2 cup sun dried tomatoes
  12. 1/2 cup organic baby spinach
  13. 1 tbsp oregano
  14. 1 cup sugar-free tomato sauce
  15. Salt and freshly ground pepper to taste
  1. Preheat oven to 450 degrees F
  2. Mix beef and pork with the onion, garlic and egg
  3. Spread the mixture in a 8x11 pan, or a 16-inch pizza pan if you have one
  4. Bake for 10 minutes
  5. While the meat crust bakes, cook and/or heat up your meat of choice and any other veggies you've chosen (bell peppers, mushrooms, etc.)
  6. Remove the meat crust from the oven and pour out the juices (you will notice the crust has shrunk by now)
  7. Preheat your oven broiler on Hi
  8. Spread tomato sauce evenly over the meat crust and add meat and veggie toppings. Sprinkle with oregano and salt and pepper (optional)
  9. Broil the pizza until the top starts to brown
  10. Enjoy!
