Grandma’s Meatloaf (Paleo Version)

Handed down recipes are the best — especially when it’s one from your great-grandma who used to live in Scotland. She was quite the cook and thankfully she passed down her knowledge to my grandma who then passed it down to my mom who ultimately gave it to me. Nothing beats the smell of meatloaf cooking in the oven — and nothing beats how easy it is to make!

 

I’ve made a few modifications to the recipe (i.e. no breadcrumbs mixed in) but otherwise, here is an incredible meatloaf recipe that you will want to make a regular part of your weekly dinner mix:

Ingredients
  1. 1 1/2 lb grass fed beef
  2. 1 1/2 tsp salt
  3. 1/2 cups organic tomato sauce (1/2 for mixing in, 1/2 to pour on top)
  4. 1 tbsp tomato paste (to add into sauce at the end)
  5. 1 beaten farm fresh egg
  6. 1 medium yellow onion, diced
  7. 1/4 tsp pepper
  8. 1 tsp basil (1/2 for mixing in, 1/2 to sprinkle on top)
Instructions
  1. Pre-heat oven to 350 degrees F
  2. Mix all ingredients together in a large bowl (if you're up for it, mixing with your hands works best)
  3. Place mixture in a shallow pan (loaf sized)
  4. Mix the other 1/4 cup tomato sauce with 1 tbsp tomato paste to thicken and pour on top of meatloaf. Sprinkle with other 1/2 tsp of basil
  5. Bake for 1 1/2 hours at 350 degrees F
  6. Enjoy!
